Pizza Making Skills!
Tuesdays, 9/9-9/23/2025, 4:00pm-7:00pm
Location: Ocean Campus, Statler Wing 101A, Quick Serve Cafe/ Kitchen
Instructor: Chef David Ashin
Join us and learn the art of pizza, including basic dough making, sauces, toppings and pizza stretching techniques.
The students will use a pre-made dough on the first day and make their own in subsequent sessions. Discover how dough "proofs" one day to the next and learn to manage making dough to freeze for later use. Students will learn several pizza stretching techniques, how to make a few different sauces, pizza topping theory, managing a brick oven, and how it applies to a pizza stone in a home oven.
Instructor bio: My first job in high school was at a local pizzeria in Boston. I went to a Tech/Voc high school and majored in the Culinary Arts. Upon graduation I attended the California Culinary Academy and I now teach in the Culinary Arts and Hospitality Studies department at CCSF. I have worked many boutique pizza stations in upscale restaurants and was an opening partner at The Pizza Place on Noriega, where I hand tossed dough for over ten years.
